Introducing the W60 Dripper From Hario


 

There is a new coffee dripper on the market from Hario that has the industry talking. With its versatile brewing capacity and specifically designed reusable, flat-bottom brewing chamber, the new W60 Dripper is a fantastic addition to the brewing market.

Whilst it’s not the same as its V60 counterpart, the new W60 dripper does feature some aesthetic similarities. Both drippers offer a wide brewing chamber diameter, a large drain hole, and spiral ribs on the inside of the cone. And although the W60 is larger than the original dripper from Hario, it still offers the ability to brew with a cone-shaped V60 paper filter. But the major difference lies within the design of a reusable, flat-bottom brewing chamber. 

The W60 was designed in collaboration with 2013 World Barista Champion, Pete Licata. In his design research for the dripper, Licata noted that it can be difficult to achieve a consistently even bed of coffee grinds with a cone-shaped paper filter, so he originally set out to design a product which addressed flat-bed brewing. However, being a big fan of versatility, he knew he also wanted to create a product that had more than one use.

The W60 has been designed to work in three different ways: with the reusable, flat-bottom brew chamber, with a paper filter by itself, or using both the flat-bottom brew chamber together with a paper filter. When brewing with the new mesh, flat-bottom brew chamber, you get lots of body and flavour in the cup with a small amount of sediment. Brewing with the paper filter only allows you to brew in a similar way that you would with a V60, with a slightly different texture and body. If you then brew with both the flat-bottom brew chamber a paper filter, you’re essentially filtering your brew twice, so you end up with an even extraction and a super clean cup. “For me, this has made some beautifully sweet and articulate cups of coffee”, says Licata, of brewing with both the flat-bottom and the paper filter.

When dialling your grind for W60, you should expect your brew to finish at about 2:15-2:45 when using just the paper filter by itself. Brewing with the flat-bottom brewing chamber, you should look for the brew to finish at around 3:00-3:30. And when using the flat-bottom brewing chamber together with the paper filter underneath, you will need around 4:00-4.30 to allow the liquid to flow through the secondary filter properly.

Licata recommends when you brew with the W60, that you use a slightly finer coffee grind than what you would when brewing with a V60. Why? The shape of the coffee filter affects how the water flows through the coffee grounds. This impacts how the coffee molecules are transferred into your cup, and it is these coffee molecules which affect flavour and aroma. If the water-to-coffee contact time is too short (the water flows too fast through the coffee bed) the coffee won’t have much flavour. If the water-to-coffee contact time is too long (the water runs very slowly through the coffee bed) you may end up with a bitter cup of coffee. The cone-shape of the V60 filter allows for a longer extraction time, as the cone fills up with the brew water and lets it drain slowly from a single opening. The flat-bottom of the W60 dripper, on the other hand, has a larger surface area, which means that the water not only has a much bigger area to drain from, it also has less contact time with the coffee. Grinding your coffee beans slightly finer when brewing with a flat-bottom filter gives your coffee bed and water a bit more contact time, so your brew is extracted beautifully and you’re getting the best flavour and aroma out of your coffee.
