But Why Is Temperature Important? 

 
 

 

If you’ve been around coffee for any length of time, you would no doubt be familiar with the importance of temperature when it comes to the brewing of coffee: the hotter the temperature of the brew water, the quicker the oils, acids, and caffeine is extracted, which ultimately affects the flavour and quality of your brew. But what is often neglected in coffee consumption is the temperature of the brew as you drink it, and how its changing temperature can affect its flavour profile.

 

To understand the intricacies of coffee profiling and flavours in the cup, it is important to firstly cover how our taste and tactile receptors work. A taste receptor facilitates the sensation of taste when food or other substances enter the mouth. There are different types of taste receptors which send information to the brain for the five main tastes: sweet, salty, bitter, sour, and umami. Temperature can vary the sensitivity of taste and tactile receptors on our tongue, in our mouth and in our throat, which can change the flavours we experience in our food and drink. Very high temperatures and very low temperatures make our taste receptors less sensitive, but there is a ‘golden zone’ of temperature range where our receptors become most awake. These peaks in sensitivity vary for each receptor; our hot tactile receptors peak sensitivity at about 45 degrees Celsius, sweetness receptors peak sensitivity at about 37 degrees, and salt sensitivity peaks closer to 32 degrees.

 

 

These changes in sensitivity cause the same products to taste different when consumed at different temperatures.
